From vineyard to glass

Gamay noir. Sustainable vinegrowing certified HEV (High Environmental Value). 60 years of age and planted in a density of 10,000 feet per hectare. Soil is deep carbonized granite. Soft pneumatic pressing before the settling of the wine and racking. Fermentation at low temperatures for about 2 weeks. Reared in vat.
